This healthy and delicious Quinoa Power Salad is one of my new favorites! By adding quinoa to any salad, you are adding protein and healthy carbs, which will make it a more satisfying meal that won’t leave you feeling hungry. This quinoa salad includes additional superfoods like spinach and tomatoes to make it full of healthy nutrients and antioxidants. This salad is also vegan and gluten-free! The combination tastes incredibly fresh and is the perfect salad or side dish to serve at home or as a dish-to-pass.
Prep/Cook Time: 20 minutes
2 cloves garlic, minced
2 Tbsp. red wine vinegar
2 Tbsp. olive oil
1/8 tsp. salt
Here’s what to do:
Cook quinoa according to package directions. Meanwhile, make the dressing: in a small bowl, whisk together ingredients and set aside.
Rough chop the spinach and arugula and place in a large bowl. Slice the green onions and halve the cherry tomatoes lengthwise, set aside.
Dice the avocados. Here is the best way to dice an avocado: Halve the avocado and remove the seed. Using a knife, cut a criss-cross pattern through to the skin. Carefully spoon out the avocado and it will separate into perfect squares.
When quinoa is done cooking, add it to the large bowl with spinach and arugula and toss. The heat from the quinoa will lightly wilt the spinach. Add the green onions, tomatoes, and dressing. Stir to combine.
Add the avocado and lightly toss. Serve immediately or refrigerate for the flavors to blend.
