Happy Taco Tuesday! Tonight I’m making one of my favorites: Pollo Asado Street Tacos. (Pollo Asado = flame-roasted chicken) It’s so tender, juicy, and delicious! Add it to a tortilla, with some fresh guacamole and cilantro, and you’ve got a delicious 10 minute meal that your whole family will enjoy! You can also use the chicken to make quesadillas for a more kid-friendly option.

I used the pre-packaged “Pollo Asado Authentico” found in the refrigerated section at Trader Joe’s. You simply throw it on the grill over high heat and in 5 minutes or less, it will be cooked to perfection! Ladies- don’t be afraid of the grill (or BBQ as people here in California call it); it is super easy! My Dad taught me Grilling 101 about 10 years ago, and I’m not trying to brag… but I can now grill better than most guys I know! If you don’t have a Trader Joe’s near you, you can use your own grilled or baked chicken with taco seasoning, or check out my Make-Ahead Cooked Chicken. For a vegetarian option, try Trader Joe’s “Chickenless Strips” or use shrimp or fish!

Here is the Recipe for Pollo Asado Street Tacos:

Prep/Cook Time: 10 minutes
Serves: 6 (2 tacos per serving)

IngredientsYou will need:

1 (1.5 lb.) package Trader Joe’s Pollo Asado Authentico
1 (12-oz.) package corn tortillas (12 tortillas)
1 (8-oz.) tray of Trader Joe’s Avocado’s Number Guacamole or make your own by clicking here!
½ cup Shredded Mexican cheese blend (optional)
Fresh cilantro, chopped
Lime wedges for squeezing onto tacos (optional)



Here’s what to do

Cook chicken according to package instructions (4-5 minutes over high heat).

Chicken on the Grill

When cooked through, slice into bite-size pieces on a cutting board.

Sliced Chicken

While slicing chicken, you’ll want to heat up your corn tortillas so that they’re not stiff and rubbery. You can do this by steaming them in the microwave. First, separate each tortilla from each other. Drizzle 2-3 Tbsp. water on a clean kitchen towel. Fan out the tortillas slightly, wrap the towel around them, and heat them in the microwave for 1 ½ – 2 minutes. They should stay warm for about 10 minutes.

Then let the taco assembly begin! Inside each tortilla, add guacamole, top with chicken (and the optional shredded cheese), and garnish with cilantro and lime.
