Italian Crock Pot Chicken

I’ve owned a slow cooker (also called a crock pot) since back when I was married in 2007. I think it was actually a gift purchased off of our wedding registry. But I think I used it maybe ONCE in 6 years?! So sad, because it really is an amazing meal maker! So when my husband and I split and I moved into my own place, I sure as heck wanted to take the crock pot with me! It was practically brand new and I knew he would never even notice it was missing!

But more commonly, it is used to make easy family dinners. You usually just throw a bunch of ingredients inside, close the lid, turn it on, and forget about it until dinner time! Then six-eight hours later, BOOM- you’ve got a delicious home-cooked meal.

Italian Crock Pot Chicken

This Italian Crock Pot Chicken is just that- simple and delicious. It’s basically a healthier version of chicken parm! The chicken cooks perfectly, it’s tender and juicy, and will literally fall apart when it’s done- no knife needed! I usually serve it over pasta, and I just tried this Gluten Free Fusilli from Target and it was pretty good. Yes, I could tell it was gluten free, but once it was covered with all the saucey cheesey goodness from the chicken, I didn’t mind at all. This would also be great served over my Baked Margherita Spaghetti Squash!

Here is the Recipe for Italian Crock Pot Chicken:

Serves: 4
Prep Time: 5 min
Cook Time: 2 1/2 – 8 hours

You will need:
4 chicken breasts
1 jar pasta sauce
4 oz. shredded mozzarella cheese

Optional seasonings:
1 Tbsp. dried basil
1 Tbsp. dried oregano
1 Tbsp. dried thyme
1 Tbsp. dried marjoram
1 Tbsp. dried rosemary
1/2 Tbsp. dried sage
1/2 tsp. sea salt

Here’s what to do:

Spray slow cooker with non-stick cooking spray. Place chicken (thawed) inside slow cooker. If you’d like to season your chicken, in a separate bowl, mix together all or some of the optional seasonings, then distribute evenly over chicken. Pour pasta sauce over chicken. You can also add a few of your favorite spices to the sauce- I added some basil and oregano.

Cover and cook on High for 2 1/2 – 3 1/2 hours, or on Low for 6-8 hours. Place chicken on a serving platter and sprinkle with mozzarella cheese. The cheese will melt within a minute.

Serve over your choice of pasta. Sprinkle with Parmesan cheese or red pepper flakes if desired. Enjoy!
