Healthy Snacks for Sunday Funday!

I can’t believe summer is finally over and fall is upon us! As we enter Week 3 of the NFL, and my fantasy team is doing worse than the LA Chargers (boo!), I wanted to begin sharing with you some new Guilt-Free Game Day Snacks to add to your arsenal of fun and festive football foods!

Each recipe features a healthy and delicious alternative to some traditional not-so-healthy snacks we tend to consume in mass quantities every Sunday Funday. For example, mini zucchini pizzas instead of real pizza, and cauliflower buffalo bites instead of buffalo wings. These healthy snacks are a great way to enjoy game day with friends, family, and delicious food- without the guilt!

So here we go! If you’re a hummus lover, you will love these Cucumber Hummus Boats. They are a healthy and delicious snack, and the perfect party appetizer to share with friends. I also love that they are a finger food and people can take one or two (or as many as they want!) vs. dipping veggies into a bowl of hummus risking the inevitable double-dip.

Cucumber Hummus Boats

Feel free to use your favorite kind of hummus, and if you’d like to get a little creative, you can stack in some thinly sliced bell peppers or additional veggies along with the shredded carrots for more variety and flavor. Game ON!

Here is the Recipe for Cucumber Hummus Boats:

Prep Time: 10 minutes
Makes: 12 cucumber boats

IngredientsYou will need:

2 large cucumbers
Hummus
Shredded carrots
Raisins

 

 

 


Here’s what to do
:

Wash and dry each cucumber, cut off ends, then slice into one-inch think segments. You should get about six segments per cucumber, and you can leave the skin on or slice it off if you prefer.

Using a melon baller (or a spoon), hollow out a rounded ball of the cucumber.

Save the cucumber balls to add to your next salad!

Spoon hummus into each hole or “boat” – a cookie dough scooper works great for this!

Then stack in your shredded carrots and garnish with a few raisins- trust me, this combination is delicious. BOOM! A healthy and delicious game day (or any day) snack!
